The basic principle producing green tea consists in deactivating the enzymes of the plant quickly enough to prevent the natural fermentation process, which normaly causes the leafes to turn black. The advantages of green tea are many. For one thing, it preserves nearly all of the natural ingredience of the plant. Secondly, it is not as strong and stimulant as black tea.
